This white wine is made entirely from young Malvasía, one of the main native white varieties of the Canaries. The grapes were hand-harvested and fermented in steel tank with ambient yeast then aged on the lees for 9 months. Winemaker Pablo Matallana is working in the central part of Lanzarote, near Timanfaya National Park.

Whoa. This wine is incredibly captivating. The flavors bounce from preserved lemon to saline to dried almond, back to dried citrus. There's something reminiscent of sherry here as well, though it is vinified from Malvasía Volcánica. It's a little bit hard to peg and the finish lingers. I couldn't stop thinking about it. This wine hails from Lanzarote, where warm weather abounds. The terrain is rocky and rugged, shaped by volcanic activity from centuries past. Winds are so powerful that individual vines are planted in pits and must be protected by semi-circular walls called zocos. If you are not afraid of trying something wild & memorable, then this will be for you.
