This white wine is made entirely from young Malvasía, one of the main native white varieties of the Canaries. The grapes were hand-harvested and fermented in steel tank with ambient yeast then aged on the lees for 9 months. Winemaker Pablo Matallana is working in the central part of Lanzarote, near Timanfaya National Park.

Here's one for my lovers of island wines, and it's as wild as the landscape of Lanzarote itself. Malvasia Volcanica, Diego, and Palomino grapes are handpicked, foot-stomped, and fermented in a combo of used oak and stainless steel, before aging under a fine veil of flor for 10 months. It's a light tangerine color, and smells deeply of salt and rocks. On the palate you can expect a sharp minerality and saltiness, but the combination of skin contact and lees aging makes it accessible (even soft), with boosted aromas of guava and pithy grapefruit. It faintly recalls fino sherry, but the oxidation is very gentle indeed. This wine from Pablo Matallana is one of the most unique and memorable wines I've recently enjoyed, perfect for lovers of aromatic orange wines, sherries, and the Jura. It would work fabulously with a spicy seafood dish.
