My love of sweet wine shows in this note of adoration to the Los Bermejos Malvasia Dulce. Grown on the Canary Islands in a landscape that could be described as lunar. The porous, volcanic soil and low rainfall leads to rich and concentrated fruit. This dessert wine sees five-years in a French oak, solera-aging system, which adds complex notes of toffee, dried papaya, and almonds to the orange marmalade, sweet orchard fruit, and dried flowers notes. This is a sweet wine, but it's also supremely balanced by tangy acidity and the ability to be light on its feet. A wine like this needs to be paired with an equally amazing cheese. A semi-soft Flor de Guía, a cow/sheep/goat cheese that's native to the Canary Islands, will be just fine.
