Patois Pear Cider, "Readymade", Cider - 2020

A blend of heirloom and seedling pears from Albermarle County, Virginia. The pears spend 2 weeks concentrating outside before being pressed and soaking on the skins overnight. The cider is then aged in neutral French oak, poly tank, and glass demijohns before being blended and finishing fermentation in bottle. This is a fruit-forward pear cider that is dry and slightly tannic, with a hint of a bittersweet finish. Pair with butter chicken and pear chutney.
