Five varieties of California-grown chiles, along with lime and cilantro, are all utilized at different points of the intricate distillation process, adding up to a potent, complex spirit begging for experimentation in some fun cocktails. The crazy, complex process begins by filling a 1,500 liter still with non-GMO neutral spirit, jalapeños, and fresh lime peels. The recipe passes through a carter head layered with fresh cilantro during distillation, further infusing it. While this is happening, separately the same non-GMO base spirit is infused in individual batches with serrano, habanero, yellow, and red sweet bell peppers, after which each batch is slowly blended together with the lime/cilantro/jalapeño spirit!!! Notes include a rainbow of peppers, fresh herbs, grass, and savory spice. You have to try it to believe it. This is a completely unique and completely awesome spirit well worth the price tag.
