I’m usually the one holding onto wines because I want to drink them “at the proper age.” Nothing gives me more chagrin than popping a bottle that is nowhere near its prime. Nicholas Joly’s Coulée de Serrant is world famous for its breathtaking depth and long life. It’s a wine that evolves decade after decade into something indescribable. All that said, drink it now. The wine is truly alive. Inside the glass are vivid fruits: yellow plums, tangerines, apricots, and heartwarming earthy aromas of freshly hewn hay, dried flowers, and beeswax. The acidity gives the wine enough energy to vibrate the glass. Few of the greatest wines drink so well in their youth. Which is why this wine is such a marvel.
