Agave was introduced to South Africa over 200 years ago, and this agave expression honors Mexican tradition in a completely African way. Wild agave between 5-8 years old is hand harvested before being pit and oven roasted for 3 days. They are crushed with wooden mallets before being mixed with water from the Drakensberg Escarpment in the Eastern Cape. This ferments before being distilled on both copper pot and column stills. This rich agave spirits has aromas of agave, chili, bell pepper, and chocolate.
