I’m not really sure about the motive behind this wine’s name. All I can tell you is that this is “not” your aunt's ten buck Pinot Grigio. It is one powerful example of the diversity of Pinot Grigio’s expressions. Paraschos’ natural Ramato (skin contact) is liquid bliss. As soon as you pour, you'll note the striking umber-alizarin color. Then aromas of persimmon, cinnamon, and yellow flowers will engage your nose. The palate is round and layered with citrus, red berries, baking spice, and white tea making appearances. There is a tickle of tannins. The winery began in the nineties being inspired by Paraschos’ Collio neighbors Gravner and Radikon. The family farms organically, hand harvests, and adds no yeast or sulfur in the cellar. The wine sees 8 days of skin maceration, and is aged in oak for 15 months in barrel and 12 months in bottle.
