A very rare and very small batch that takes the already artisanal approach of this producer to even more extremes. Part of the agave used for this special batch is naturally fermented for an extended period of time in a micro 8 liter open air pot and the addition of this fiber batch adds deep layers of flavor in the final tequila.
Lovely and loud, practically climbing out of the glass with bold aromatics of roasted apple, sweet potato, pomegranate, toasted cinnamon, orange and lime zests, wet stone, bamboo, and pineapple cake. The palate makes good on those promises and more, with a silky texture and a subtle heat that makes a late appearance following notes of cooked parsnip, honeycomb, lemon curd, white pepper, a touch of clove and fennel seed.
