Serious gin drinkers know that infused dry gins are hard to get right. Thankfully, Casa Eva, a small distillery in Llucmajor on the island of Majorca, has spent the last decade refining their infusions with seasonally harvested fruit and botanicals that are turning connesieurs' heads. The company is the project of Stefan Winterling and Eva Maier Gómez, who met while studying oenology, moved to Mallorca, and opened the island's first gin distillery in 2011. Their “La Mallorquina” infusion, which they began making in 2016, showcases their skill: base gin is infused with macerated Mallorquina olives, a traditional olive variety exclusively grown on centuries' old trees in the Tramuntana Mountains. Aromas of tangelo, lemon, pine blossoms, and olive brine give way to a round, green, juicy palate that’s perfect on its own or in cocktails.
