Made from 83% estate-grown Kogane Sengan sweet potatoes, and 17% black koji rice, this ferments with native yeast. The sweet potatoes are lightly cleaned after harvest to ensure flavor from the terroir. Aromatic with sweet potato, lavender, nuts, and sweet spice, this is a versatile shochu to drink a variety of ways.
