Like all other creations from this intrepid distiller, this spirit at once defies easy categorization and is also simply delicious and easy to enjoy. The extraordinary way that it came to be is by way of Briemere Farms, located close to the distillery on the North Fork of Long Island, where there perfectly ripe summer peaches were fire cooked and stewed before being fermented with wheat, whey and organic oats. 100% pot distilled and rested in glass demijhons to allow for all the layers of flavor to come together. Best imbibed in small sips a la mezcal or tequila, before, after or during anything - we can't think of a time it wouldn't be a pleasure to be enjoying this.
