You may never have thought the day would come when you'd be reaching for a bottle of smoked sunchoke spirit but this will without question be one of the most interesting and inspired things you'll come across this year.
Made with locally, organically grown North Fork sunchokes that are cooked in an earthen oven a la mezcal, and slow fermented with the additions of koji and local honey prior to distillation. The result is something that has the familiarity of agave spirits and even traditional pot still potato vodkas, that at the same time is something entirely new, opening a door to a world of unexplored flavor possibilities. On last tasting we found notes of foraged mushrooms, bee pollen, fresh chervil, green peppercorns and hints ofvanilla.
