Viamundi Sotol

Long relegated to simply Tequila, the seemingly infinite tapestry of Mexican spirits is finally coming to light and there is perhaps no greater example of that than this Sotol from Viamundi, a category that many had not even heard of outside Mexico up until recently. From from desert plants, in this case from the Dasylirion Wheeleri family, creating a profile similar to agave spirits but also distinctive, this expression is an unbelievable value considering it has been masterfully crafted by a fourth generation family of distillers currently lead by wife and husband team Norma & Benvenido Fernandez along with their son, Giovani. When you taste a great sotol you realize that it may be the most intrinsically 'beautiful' of all Mexican spirits with notes here that touch on so many flavor dimensions including licorice, italian plums, summer raspberry, raw honey and sweet herbs.
