Made from 100% wild Desert Spoon succulents that grew for a minimum of 18-22 years prior to manual harvest. The plants were then broken down by hand and cow stomping before being wild fermented in open-air oak vats. Twice distilled in clay pot stills the spirit has retained its wild and natural character with notes of forest floor, Maine woods, cracked pepper, fresh herbs, pine needles, wet sand and bright citrus. Reminiscent a great new wave retsina in the most beautiful, invigorating sense.

Flor

Flor is a protective layer of naturally occurring yeast that grows, under certain circumstances, in the barrels after fortification. Its presence (or absence) is what determines the style of a given Sherry. When it does grow, it protects the wine from oxidation while feasting on the available glycerin - the resultant Sherries are thus dry and very pale in color (called Finos or Manzanillas).
