Terroir is a concept we most commonly hear when talking about wine, but it also exists within the growing of agave and the resulting tequila made from it. The elements that affect terroir include soil composition, altitude, temperatures (day and night, throughout the year), rainfall, humidity, and exposure to the sun and winds. Tequila Ocho explores terroir by producing batches from single fields or ranchos.This Plata is from the San Jerónimo rancho five miles outside the town of Arandas in the state of Jalisco. The rancho is known for full sunlight and rust-red soils, which are classic to the highland growing region. If you enjoy tequilas with that buttery white cake and sweet chocolate notes, this isn't it. Full of minerality, herbs, cinnamon, jasmine and grass.
