Staff Pick Notes

What does one do after 28 illustrious years as chef de cave at Dom Perignon? Retire to the South of France and sip rose in a chaise? Not if you're Richard Geoffroy. Instead you move to Japan and create an extraordinary sake. Geoffroy had been travelling to Japan for years, and fell in love with the food and culture. Over time an idea took shape: to create the finest sake possible using the ideas behind Champagne. His experimentation focused on blending to achieve balance and complexity. His 3rd bottling is a blend of more than 20 different sakes with different rice varieties, terroirs, yeast strains and reserves from different years. It's intense & rich yet bright & elegant, with a beguiling mix of vegetal, floral, white pepper and umami notes.Pairs well with many types of cuisine, not just Japanese, not unlike a certain Champagne.
