Our Barale Chinato is currently the best value available in the U.S. for this classic drink. Falling somewhere in between a vermouth and an amari, this style of chinato from Piemonte uses Barolo, the king of Italian wine, as its base. Once the wine has been made and aged, quinine is added along with traditional herbs, botanicals, and spices such as star anise, citrus, cardamom, and more. Excellent as an after dinner digestive as well as in cocktails and especially paired with chocolates.

In the digestivo category Amari steal most of the spotlight, but let me introduce you to their sweeter cousins, the Chinatos. These are wine-based, aromatized spirits meant to sip at the end of a meal that are equally complex and satisfying and oh so tasty. Barale from Piedmont is one of my all-time favorite wine producers that do everything right, including their spectacular chinato. It's made with 10-year-old Barolo, which is macerated for 6 months with herbs such as at china calisaia bark, rhubarb root, gentian, cinnamon and other baking spices then fortified with grappa. This is deliciously sweet with lovely baking spice notes, orange marmalade, dried cherry. Less bitter than an amaro, it would pair well with ginger cakes, chocolate or biscotti.

The most famous grape in Piedmont is the noble Nebbiolo, which makes the long-lived Barolo and Barbaresco. There are plenty of Nebbiolo-based wines that are quite enjoyable in their youth, however, often produced in smaller, lesser-known regions such as Ghemme or Gattinara.
