Made from the rare Omachi rice, which is difficult to cultivate due to its height, this is made using rose vine yeast. A seasonal spring release, this is unpasteurized and undiluted, aromatic with stone fruits, steamed rice, and almond nougat. Pair with yakitori.

As if it wasn't already obvious by the name, purity is the essence of this Namasake Genshu from the Rihaku Brewery. It's unpasteurized (Nama) so that natural flavors (even flaws) aren't taken away to make a consistent profile. It’s also undiluted (Genshu) at 17%, which gives the sake a bit of warmth. Most importantly, the minimal processing gives the sake exceptional depth and concentration of flavors. There's a real appealing umami aspect as well. You can serve it with heavier courses than raw fish. Pork belly buns come to mind.
