Clean, dry and refreshing, this an approachable style of sake that anyone can enjoy. Made with a very rare rice from Hokkaido known as, Ginpu, which is clear and has a nice aroma. Given the softness of the water at Shibata, they are able to produce a well rounded sake that leaves you with a mild finish. Packaged into a flask-style bottle to help introduce craft sake to everyone.

I've had a recent realization that I know almost nothing about sake - I'm a novice at best. I've decided that I want to learn more, so the goal to entry was to find something accessible & clean - not too complex or "funky". I grabbed a flask of Shibata Black Junmai Ginjo and some sushi and shrimp rolls and started my journey. On it's own, the sake had a nice balance of delicate fruit and brine notes with a soft silky texture. Upon pairing, the volume was dialed up - brine notes and salinity came to focus and enhanced those notes in the food, particularly the peanut sauce with the shrimp rolls...the "a-ha" moment I was hoping for. Shibata Black is a perfect gateway for anyone who's curious about sake and looking for a baseline to build on. It left me wanting to dig deeper and learn more!
