Plazma White, Kolónia 52 - 2021

Here’s one of the first vintages bottled by the Hungarian couple Annamária Török and Attila Francisti. Both got their winemaking experience working on the estates of natural wine legends Gut Oggau and Horst Hummel. They were lucky enough to find a near abandoned vineyard at Szent György-hegy, whose owners lived far east in Budapest. They grow indigenous varietals, such as Furmint along with Pinot Noir and Cabernet Sauvignon. This is their white - a blend of 4 grapes, vinified and aged separately. The grapes are fermented with the skins for 4 days. I found aromas and flavors of baked apples, lemon curd, lychee, cinnamon, beeswax, and dried autumn leaves. It has a lively acidity and a cloudy, grainy texture. Was a good match with my honey-ricotta toast.
