Rancio is a special style of wine unique to Languedoc-Rousillon. While fermenting, the wine is fortified with spirit to raise the alcohol levels and halt fermentation. The wine is then exposed to the elements in glass demijohns. The resulting vin doux naturel is sweet, dark, tannic, yet extremely complex with a myriad of aromas Pair this unique dessert wine with dates and sheep feta.
