Entirely Altesse from Bugey grown on limestone and marl soils, this is no mere Vin de France. Seiichi Saito mostly makes wine in Burgundy, and has worked at estates such a Leflaive, but his micro-négoce project has a long reach. This dry white is vinified and aged in neutral barrel for 11 months, with minimal use of SO2. Pair with chicken in mushroom cream sauce with egg pasta.

Seiichi Saito, a Japanese expat doing negociant work out of Burgundy, is making some of the most exciting wines coming out of France right now. After stints at great estates like Bize, Mugnier, and Leflaive, Saito opened the acclaimed restaurant La Lune in Beaune. He couldn't stay away from wine though, and now makes a small amount of classic tasting Burgundy with minimal intervention. We were lucky enough to snag some. Even considering how tiny his production is, this white is a rarity. While best known for Burgundy, Saito gets a little Bugey-grown Altesse, a semi-obscure Alpine grape. The wine spends just under a year in old oak, and comes out with the body and nuttiness that define the grape but brighter, pairing tremendous minerality with aromas of grilled lemon, sliced almonds, mountain flowers, tea leaves, and salted butter.

Altesse

Sometimes known as Rousette, sometimes as Maconnais, and some other times as Altesse Vert, Altesse is a white grape variety growing mostly in the Savoie region of eastern France (bordering Switzerland).
