In Alsace, it’s hard to find wine that isn't made at organically or biodynamically farmed vineyard. Yet a new crop of young, Alsatian wine makers are adding low intervention methods to make exciting natural wines. Kumpf and Meyer are at the forefront of this movement. The Restons Dark is a pet nat from Pinot Gris and Pinot Noir whose juice has been macerating on the skins for one week. In the glass it reveals a deep amber/orange color. The nose shows off apples, pears, spice, and dried flowers. On the palate, it has a slick mouthfeel, with flavors of apples, cantaloupe, and white tea. There’s no added sulfur, no disgorging or filtering of sediment. Red Hawk cheese is incredible with this.
