Japanese whisky is getting all the attention these days but make no mistake, this is one of the most artisanally produced and easily one of the rarest spirits in all of Japan. Made from 83% beni-imo purple yams and 17% koji rice all distilled at atomospheric pressure. This allows a maximum amount of flavor to carry over to the final distillate, of which only 1% is kept for bottling. Mind-blowing.
