Aymeric and Marceline Beaufort make wines in the traditional style of their family, always using demi-muid aging. The soils on their estate are quartz with red ocher clay, from which it takes its name. Pinot Noir is entirely destemmed, and spends 12 months in demi-muids to encourage micro-oxygenation, and it is unfined and unfiltered. Pair this light dry red with roasted pork loin and sour cherries.
