A fresh and lively dry white with just a touch of spritz, Txakolina is an extremely quaffable wine. This expression comes from Amurrio, near the Atlantic Ocean, and benefits from its cooling winds. Given the time of year, I'm graduating to white wine season (sorry Tempranillo, I'll see you again in October). And while I love an Albariño or a New Zealand Sauvy B, nothing is quite as thirst quenching and lively as a Txakoli wine. Made from native grapes of the Basque country, txakoli wines are citrus-forward, pleasantly fragrant, and delightfully refreshing. All qualities that scream summer (look at your calendar right quick). If you're looking to pair this with food, something brothy, briny, and fishy would work incredibly well with this wine. Bold character and salt makes this wine thrive. So if you're looking to kick it back with your next batch of oysters or your selection of funky cheeses (talking James Brown levels of funk) this is THE wine to pair it with.
