A blend of hand-harvested Chardonnay from the Sonoma Coast, Russian River, and Sonoma Valley, Valravn produces classic California Chardonnay in a restrained style. Fermented both in oak barrel, and stainless steel, 40% of the wine underwent malolactic fermentation. It was aged in 25% new French oak barrels, with stirred lees. The creamy, oaky notes are subtle, it is medium-bodied, and the bright fruit and vibrant acidity of the wine shine through. To pair with dim sum, chicken with mushrooms, and rich salad spreads.
