A mineral-driven white wine made from local grapes planted on soils very similar to what you have in Chablis. It was fermented with native yeasts in stainless tanks, then rested on the lees for 20 months and then aged in tank and different sized old oak barrels. This is a voluptuous white wine on the palate.

Named for the high concentration of fossils left in the Kimmeridgian clay soil, the wine has a striking minerality paired with a luscious body thanks to the two years it spends resting on the lees.
