Using natural yeasts, fermentation is conducted in small open-top fermentors, then new wine is immediately put into 75% new and 25% one-year-old French Burgundy barrels. It matures for eighteen months before being bottle unfined and unfiltered.

I’ve always liked Mount Eden for its thoroughly un-Californian style. What I mean by this is that I’ve never had a wine from them that was “chock full o’ oak,” over-extracted, or amped with alcohol. Which for a longtime were tell-tale characteristics of “premium” Californian wine. The aroma is earthy and subtle: think horseradish, cracked pepper, and sandalwood. If you close your eyes the aromas blend together to give the illusion of a spice garden. The palate is quite candid. A juicy texture and clear red fruit flavors (cherries, pomegranate). It finishes with earthy notes and some spice that you smelled in the beginning. Mount Eden is making wines reflective of themselves, not their neighbors.
