"Isabelle" is a blend of the best of the best cuvées from six vineyards. A wine with an incredible level of detail, this is not a Cali fruit blockbuster, it’s an ethereal Pinot expression with both new and old world sensibilities. Aromas of berry preserves on whole-wheat, fried sage, and bruised thyme. On the palate, acidity provides clarity to cherry compote and roast raspberry, which lead us to a finish of strawberry fields forever. Another example of an Au Bon Climat wine that can go up against high-end Burgundy without losing its sense of place. Give it some time to open up on your journey together. My bottle made fast friends with salmon ‘en papillote’ with sliced zucchini and fennel bulb. This wine could easily lay down for ten, fifteen years, but it’s so good now I’m not sure I have the strength to wait ten or fifteen minutes.
