This sparkling rosé is made from 90% Cabernet Sauvignon and 10% Petit Manseng. Bled Cabernet Sauvignon grapes from the younger Daumas Gassac vineyards. The “free-run” grape juice is fermented in a closed tank so as to retain all the fermenting gas. Aged 3 to 4 months in closed stainless steel tank.

An elegant rose sparkler showcasing predominantly Cabernet Sauvignon from the younger Daumas vineyards with a touch of Petit Manseng to finish. Coming from one of the most well-regarded producers in the Languedoc, it is not a surprise this is a consistent go to in my arsenal of sparkling wines. A good fit for any occasion, utilizing the Charmat method like prosecco to keep the effervescence softer, and silkier on the palate. The low sugar profile works wonderfully here keeping the wine bright but full of all of the textured, fleshier fruit you might expect from the Cabernet base. A brilliant pairing with any charcuterie selection, but also can hold its own alongside the main course, with enough vibrancy to play well with most poultry and fish dishes.
