Production Methods

Natural

Wine made from organically or biodynamically grown grapes with minimal intervention avoiding the use of chemicals, additives and technology.

Orange Wine (Skin Contact)

Orange wine is made by using white wine grapes, which are pressed and left in contact with the skins, seeds, and stems for an extended period of time, similar to how red wine is made.

This prolonged maceration extracts color, tannins, and phenols, giving the wine a darker, sometimes orange color. It also produces a wine with more structure and intense flavor.

Maceration times can vary between a few hours to many months, with longer contact giving more color and extraction.

Staff Pick Notes

Melanie Drese and Michael Voelker have lived all over the world (NYC included) as non-wine-world professionals. One day they ditched their jobs, got married, and moved to Michael's family winery in Franken, Germany. They started 2Naturkinder, an offshoot of the estate. The couple were determined to make natural German wines, grown organically, without additives such as yeasts or sulfates. None of their wines are filtered or fined. Drei Freunde (3 friends in German) is a blend of the local varietals: Silvaner, Bacchus, and Müller Thurgau. Each wine was fermented on the skins (orange) for 1 week in large neutral barrels. The blend has a lactic tartness from wild fermentation and a creamy texture. Flavors of sweet spice and nuts are displayed on the palate. Tannins are present but not prevalent. Great with mushroom-based dishes.

The most useful words to know on German wine labels are “Kabinett,” which indicates an outstanding everyday wine, and “trocken,” which means “dry.” As far as dessert wines go, a half-bottle of German Eiswein is so potent that you'll be able...
