Cotswolds Single Malt Whisky

We couldn't wait to get our hands on the first US release of single malt whisky from this exciting young English distillery. The whisky is a grain to glass operation with 100% of the barley coming from a local single farm source, in this case Bradwell Grove Farm. The harvested grain is sent to Warminster where it is 100% floor malted manually according to time honored tradition before it goes through its long, multi-day mashing and fermentation at the distillery. Distillation occurs through two passes in a bespoke Holstein pot still and the heart cuts are aged in ex-bourbon and reconditioned red wine casks for a minimum of three years. Give the whisky a few moments in the glass and watch the aromas and flavors slowly blossom with notes of rich butterscotch, apricot preserves, and ripe oranges. The whisky hits your palate with honey then switches gears to showcase the rich malt character at the core along with a long finish of mixed spices, cocoa and resin. This batch was produced from Odyssey barley harvested in 2014 and the limited small batch produced a total run of 1,920 bottles for the world.

Let's do a little single malt stereotype smashing with Cotswolds today, but in the best way possible. First of all this whisky hails from England, taking its name from the idyllic region of farms and pastures where it is produced. Locally grown barley is malted nearby at Warminster Maltings, circa 1850. The signature whisky of the distillery was thoughtfully fostered by industry legends Harry Cockburn and Dr. Jim Swan, who teamed up to create a fruit-forward, high-ester whisky. Other distinctive considerations make this a remarkable dram, including the village water source (always important in distillation), the combo of shaved, toasted, and re-charred red wine and ex-bourbon barrels, and non-chill filtration with no added coloring. Honey, stone fruits, sugar, spice & creaminess all appear in one glass. Definitely NOT stereotypical.
