After months of air drying the white Moscato Giallo and red Moscato di Scanzo grapes were pressed. Fermentation lasts nearly two months and the wine is aged in steel for 3 years before bottling without the use of any oak. The acidity is a delight and clearly comes from the limestone-laden soils of the region called Sasso di Luna. This and the fact that malo didn't occur and therefore preserved the malic acid that balances this dessert very well. This can age for decades in bottle as a result.

What comes to mind when you picture Moscato? If your visual is a light, low ABV Asti served over ice in a solo cup, then the wines of Azienda Agricola Biava will quickly melt your brain. The family farm, located in the mountain town of Scanzorosciate near Bergamo, is renowned for renditions of Moscato di Scanzo, a decadently sweet dessert wine made from the rare red-skinned Moscato Nero grown nearby. Their "Exenthia" is a twist even on their own unique tradition: it’s made from a blend of 70% Moscato Giallo and 30% Moscato Nero, both of which are dried for 45 days, fermented to 16% ABV (w/o malo!) and rested for 3 years in tank. The result is wild and complex, akin to Vin Doux sans spirit: aromas of honey, apricot, and baking spice give way to a rich palate with a with a long, delightful finish. Your expectations may never recover.
