This beautiful bittersweet amaro comes to us from Distilleria Sibona, located in Piedmont. Sibona is a historical distillery there, even possessing the oldest distillation license available in Italy: the "Number 1," and winning many awards for their high quality grappas. Their Amaro Sibona digestif is made from an ancient recipe of slowly infused herbs, roots, aromatic plants, and citrus. I got notes of vanilla and cola, reminiscent of root beer, to start. Allspice, rhubarb, and a suprising but welcome mint note on the finish round out this well-balanced and incredibly enjoyable amaro. Truly perfect as an after dinner treat (on the rocks or neat) or as the producer suggests- with dessert, especially ice cream!
