If you've want to step up your mezcal game, but aren't quite convinced it's worth the high prices some can command, this is the bottle to try. A lot of entry-level mezcals (~$30-50) are defined by their smokiness, but good mezcal in general should not be dominated by that campfire flavor. Smoke masks what's underneath, which in this case is the unique agave and terroir-- everything the budding connisseur is after. The Alipus San Andres is particularly expressive, sweet and creamy in a way I've only tasted from bottles at least twice the price. It's almost like cake batter. The smoke stays in the background acting as the fixative that keeps the rich flavor from getting cloying or boring. You'll want to keep sipping.
