Like their other spirits, the gin from Neversink is made from scratch on-site at the distillery. To make the spirit, the team mills grain and ferments it with local apples in a 50/50 ratio and distills it, forming the base spirit. An extra distillation passes the new make through a botanical recipe focused on three types of fresh citrus, juniper, licorice, coriander, elderflower, star anise, cardamom and cinnamon. The gin has a great progression where the sweetness of fruit on the nose turns savory and dry on the palate with notes that include avocado leaf, dried banana chips, nilla wafers and fresh orchard fruit.
