Neversink Spirits Gin

Like their other spirits, the gin from Neversink is made from scratch on-site at the distillery. To make the spirit, the team mills grain and ferments it with local apples in a 50/50 ratio and distills it, forming the base spirit. An extra distillation passes the new make through a botanical recipe focused on three types of fresh citrus, juniper, licorice, coriander, elderflower, star anise, cardamom and cinnamon. The gin has a great progression where the sweetness of fruit on the nose turns savory and dry on the palate with notes that include avocado leaf, dried banana chips, nilla wafers and fresh orchard fruit. A great new edition.

I met Yoni Rabino, one of the founders of the Neversink Spirits Gin at my bartending days and he ordered an Aviation. Back then we had Neversink Gin on the shelf, because it was a cool thing to have a local spirit on your bar shelf. That night I learned what Inspired Yoni to make such a spirit. He wanted to bring an old diversity of the Gins, Calvados or Eau de Vie from around the world under one roof, to celebrate the local fruit of New York State and to create their distinctive line of spirits. They use about 11 botanicals and the resulting spirit is a nuanced and delicate gin, with warm baking spice and fresh citrus accenting the apple base. It’s a delicious, full-flavored gin that is great to sip on with an ice cube or in your favorite gin cocktail like an Aviation.
