This new edition to the Siembra line of agave spirits is a very special lowland tequila produced by the Rosales Family of the Cascahuin (Mountain of Light) distillery in El Arenal, Jalisco. For over 100 years, the Rosales family has been producing traditional tequilas in one way or another and, since 1956, when they founded their own distillery, they have continued to make uncompromising top-notch spirits that take many years of patience, care, and back-breaking labor to see come to fruition. Using only estate-grown agaves coming from two different sources, the long, hot days and the sandy volcanic soils rich in minerals yield agave plants that are concentrated and sweet at one turn and earthy, spicy, and full of minerals at another. Pesticides have never been used on the plants and at every vital step of the production process manual methods are employed where possible, from the harvesting of the piñas by lead jimador Jose Romero, to the roasting of the plants on brick ovens by Javier Placensia, to the crucial milling stage by 20-year veteran Jose Luis Rojas, fermentation with bagasse in both the original stone Mamposteria as well as stainless steel by Adalberto Lopez and Demetrio Torres to the final distillation
