Laurent Cazottes makes spirits that are unbelievably good. Unbelievably good to the point where I despair of really describing what makes them unique in words alone. To the point that if you have ever enjoyed another eau de vie, or a good calvados, or even just consider yourself a fan of apple, pear, or quince flavors, you owe it to yourself to try. I choose the pear as my favorite of his line because it is unabashed. Aromatic, mouth and nose filling, cidery and wild and perfectly pure in its explosive fruit all at once. You'll still be tasting it an hour after your first sip. The vibrant and full pear flavors certainly linger, but the finish brings in bitter almond, bergamot oil, long steeped lemon verbena tea, and autumn leaves. Like no other eau de vie in the world.
