Light and refreshing, this delicate Glera can be enjoyed with light snacks and at any time of day. Light cream, asian pear notes ripple through the sparkle of this gossamer wine. In Valdobbiadene, Prosecco Col Fondo is often stored standing upright, then decanted into a pitcher, reserving the last bit of sediment-rich wine to be tasted separately. The whole winter season the wine rests and is decanted in stainless steel tanks with periodic stirring in order to keep it homogeneous and to let the yeasts work.

Col Fondo is a sparkling wine made from the same grape as the regular run-of-the-mill prosecco: Glara. The only difference is that the second fermentation occurs in the same bottle (AKA Methode Champenoise). (Traditionally the second fermentation for Prosecco is in a tank [Charmant method]). This style of second fermentation is the oldschool way to make Prosecco. Ca’ dei Zago smells like opening a fresh pack of yellow warheads in the back of your mom’s minivan while driving home from school. Sour, in the most blatant way. Tart electric green apples. Energized lemonade you enjoy while rolling around in the sand of the softest beach ever. To immerse yourself in Ca’ dei Zago, Col Fondo is to experience the off-beat, rare side of Prosecco. It is a rustic, unsullied wine that shows the unique passion for heritage.

Prosecco

Until recently, "Prosecco" could refer either to a wine or to a white grape. In 2009, however, the grape was renamed "Glera" in a bid to protect Prosecco's good name. Prosecco is usually a sparkling wine made by the Charmat method, though still versions do exist. Because it is so easy to drink, with or without food, Prosecco is a hugely popular choice for parties.
