Staff Pick Notes

Collio Goriziano (often just Collio) is a wine DOC covering the hills around Gorizia, Friuli-Venezia Giulia, in Italy's eastern most territory that shares historical ties with Slovenia and Austria. Collio predominantly produces white wines, like this exquisite field blend of 70% Friulano, 15% Malvasia, 15% Ribolla Gialla. Winemaker Edi Keber's vineyards are located in Zegla on soils rich in "ponka", a peculiar soil type consisting of layers of limestone, marl and sandstone. Vinified entirely in concrete tanks, and rested in those tanks for more than a year before being bottled. This is a full textured and distinctly dry white wine, complex in its fruit and floral notes of peach, quince and white blossoms. A savor, distinctive note of almond or cedar make this the perfect pairing for any farm to table meal.

The grape that benefits most from the latter of these unusual and ancient techniques is the white varietal, Ribola Gialla, which yields...
