"Nibio" is an ancient name for Dolcetto and hearkens back to a time when the grape was widely planted around Gavi (those vineyards are now dedicated to the Cortese variety). This dark, earthy, and mineral-laden rendition of Dolcetto offers a fresh look at a grape known for its ebullient fruitiness. This 16-hectare estate is not only Biodynamic but also self-sustaining, in the sense that they raise everything from chickens to the yeasts they use in fermentation. Their wines are weirdly beautiful, compelling, and entirely worth experimenting with. The Dolcetto comes from the so-called "Terre Rosse": red, iron-rich soils that impart a distinctive mineral character to this wine.

Stefano Belloti and Cascina Degli Ulivi has been a pioneer in biodynamic vineyard care since the 1980’s. His mentality is that great wine comes from healthy terroir. In addition to their vines, the estate breeds livestock for milk, grows grains for bread, and vegetables for the market. Cortese is the most widely planted grape here. The sparse plantings of Dolcetto produce this beauty that feels alive in the glass. Flavors and aromas are densely packed. Fresh dark berries are prominent with a trace of smoky meat, and minerality show as well. Delightful with country paté.

Dolcetto-based wines are not sweet, as many people might surmise on hearing the name; the Piedmontese declared it "dolce" only because it is lower in acid than the wines they're used to. Dolcettos are usually meant to be enjoyed young. Some of the best ones come from the area around the town of Alba.
