Sparkling rosés are a mixed bag: some are exorbitantly priced, others are unbelievable bargains, but all too frequently they leave you wanting just a bit more. Then there are wines like the Avinyó Cava Brut Rosado that have everything. It's from one of the oldest Cava producers in existence, and all of their wines are made from organic estate vineyards and aged extensively before release. This deep pink sparkler is made entirely from Pinot Noir grown in calcareous clay soils from a single vineyard "La Fassina" in Avinyonet del Penedès. The grapes are harvested at night to preserve their naturally high acidity. It exudes tart red berries and grapefruit peel on the palate with a brilliant streak of minerality. Pair with savory starters like gambas al ajillo or taquitos.
