Charleston Sercial Madeira, The Rare Wine Company Historic Series

Much can be said about this collaboration with Mannie Berk's 'Rare Wine Company' and Vinhos Barbeito. For more notes on the 'Historic Series' Just take a look at my Staff Pick on the New York Malmsey!! Today I am compelled to share with you some Sercial. The latest-ripening noble variety on Madeira, typically harvested as late as early November. The grapes begin vinification and then fermentation is halted at near-dryness using a neutral grape spirit. A firm acidity give this Madiera a bone-dry perception. Primary flavors take on orange peel / oil, beeswax, almond and a subtle but distinctive salinity. Approximately 85% Sercial and 15% Tinta Negra (from approx. 80 years old vines)  This is a glass that will leave you astounded, with palate cleansing clarity fit for a fine tasting menu; and refined fruits that leave me craving cheesecake!
