If you're seeking for a totally unique sake experience, look no further. Hailing from Hiroshima, Hanahato Kijoushu was barrel-aged for 8 years before bottling, which is extremely unusual in the world of sake. (Most sakes are consumed within a year or bottling or sooner, and tend not to improve with age). On the nose, you'll find concentrated umami aromas of fish market and fermented soy. On the palate, Kijoushu is full bodied and lush, with sweet mid-palate and a malty finish. A pairing challenge for those who love to get creative, this will complement a dish that is rich, sweet and savory. Kombu chocolate caramels? Crunchy, candied crab? For the adventurous eater, the possibilities are endless.
