Savagnin Ouillé, Domaine de Sainte Marie - 2022

In the Jura, Savagnin is generally aged “sous voile” or under a layer of yeast. The yeast grows as the wine is aged in barrels that aren’t filled to the top. It’s a process that is similar to aging Sherry. It produces rich, textured wines that possess an assertive umami and nutty note. The Ouillé process ages white wines in barrels that are filled to the top, not allowing the wine to be covered in yeast. Flavors of fresh citrus, apples, and flowers are retained. Domaine de la Sainte Marie’s Savagnin Ouillé bears aromas of roasted pears, lime citrus, and white flowers. It is brisk and acid driven on the palate with a hint of sesame brittle, and vanilla cream.
