This edition, distilled from 55% Islay rye and 45% Islay malted barley before ageing in a mix of first fill bourbon barrels and first fill Virgin American Oak casks, is a testament to the spirit of the place: aromas of cracked pepper, grated ginger, and baking spice give way to a palate that’s juicy, with notes of melon, apricot, pear, and fresh herbs.
