Staff Pick Notes

With the Heather limited release, Highland Park has restored its quality of a couple of decades ago. It is an unadulterated liquid at 63.6% with a powerful punch. The nose senses charcoal, burnt marshmallow, toffee, and roasted nuts. The palate will enjoy flavors of crystalized ginger, butterscotch, dates, nori, and almonds. A mouthful will feel the heat, so sip on this slowly or add water. Part of the beauty of this Scotch is that heather was added to the burning peat during distillation. The result is a smoke that is much softer and more integrated than their Islay counterparts. The smoke is an element rather than the dominant force.

History:Distillation was brought to Scotland from Ireland by missionary monks in the 6th century. In 1644, the first taxes were imposed on Scottish distillers by England, with the result that most of the nation’s whisky was soon distilled illicitly. With the Parliament’s passing of the “Excise Act” in 1824, licensing fees for distilleries were much cheaper.
