This extra-dry style vermouth is based on locally sourced Grüner Veltliner, local neutral grape spirit, and botanicals including Castelvetrano olive, dill seed, rosemary, thyme, oregano, lemon peel, orange peel, and wild foraged kombu. Made as the perfect vermouth for a dirty martini, this is also delicious on its own, over ice, and incorporated into sweet and savory cocktails.

San Francisco's Chris Beyer is the founder and aperitif-maker for Veso, and he strives to create aperitifs that are complex in character but simple in use. To quote him, his vision is to create bottles that are "somewhere between anticipation and fulfillment, where transition becomes ritual." This vermouth has surely found it's way into my martini rituals! Only 1000 bottles produced.
