Orange Wine (Skin Contact)

This prolonged maceration extracts color, tannins, and phenols, giving the wine a darker, sometimes orange color. It also produces a wine with more structure and intense flavor.

Maceration times can vary between a few hours to many months, with longer contact giving more color and extraction.

'Sous le Manteau' (French 'under the counter') is an ode to the first wines that Jordan and Aymeric Amiel secretly produced in their Grandmother's garage in 2012. What shouldn't be a secret is what a complex and carefully created wine this orange blend is! Demeter certified, hand picked/sorted, with the grapes fermented separately to take advantage of Grenache Blanc's color and Chenin's acidity, this undercover masterpiece then spends a year in oak foudre. According to the winemakers: "the aspect is...orange," and I couldn't agree more. The gorgeous color draws you in to fresh orange blossom and cinnamon aromas, and the palate breaks through with an impressive balance of tannin and fruity acidity (not easy to do when playing with skin contact blends AND oak). Keep on hand to pair with dried figs and comte cheese.
